What is Kuria?

Kuria (also called dal) refers to seeds that have been split or coarsely cracked with the outer skin removed. Splitting exposes the inner seed so it releases its flavour, aroma and pungency far more readily than a whole seed — which is exactly why kuria is the heart of Indian pickle (achar) masala. Split seeds also act as a natural preservative, helping give traditional pickles their long shelf life.

We manufacture the three classic kuria used in pickle masala (methia masala / koro sambhar): methi kuria — split fenugreek, slightly bitter and pungent, considered almost irreplaceable in pickles; rai kuria — split mustard, sharp and pungent, responsible for the famous tangy taste of Indian pickles; and dhana kuria — split coriander, coarser and aromatic, adding depth. Available individually or as a ready pickle-masala blend, in bulk with full export documentation and COA.
